This super simple chickpea salad is the best easy go-to recipe to have on hand! Full of fresh vegetables, herbs, and a crisp lemon-dill dressing, it’s bright, healthful, and filling. Ideal for picnics, lunches, or a side, the salad is adaptable and packed with a big flavor. Feel free to dress it with your favorite herbs, be it parsley, basil, or mint, and enjoy its refreshing flavor served in the bowl, or as a topping over salad greens. It’s the perfect summer dish for whenever you want something fresh, light, and full of flavor!

You’ll need the following ingredients to make this chickpea salad recipe:

Grape tomatoes: Use a combination of yellow and red to make this salad a pretty cornucopia of color. You can hunt for cherry tomatoes as well!


English cucumber: For crunch! I prefer English cucumbers here, as they have thin skins and few seeds. If you can’t find regular cucumbers, peel and seed them before chopping them up and adding them to the salad.


Pickled red onions: They just add a pop of tangy flavor. No time to pickle? The sliced green onion would do here, too.


Kalamata olives: For that salty, briny flavor.


Fresh parsley, dill, and mint: These are what you can smell in this salad, for those who make it, such aromatic, fresh notes. I particularly love the way the dill enhances the tang of the pickled onions and dressing.


The lemon dressing: This zesty dressing ties the salad together! It’s a straightforward mix of olive oil, lemon juice, Dijon mustard, garlic, salt and pepper.


How to Prepare This Chickpea Salad


This chickpea salad recipe is incredibly easy to make! Here’s how it goes:


  1. make the dressing. In the bottom of a large bowl, whisk with olive oil, lemon juice, mustard, garlic, salt, and several grinds of pepper.


  1. add in the chickpeas, olives, pickled onions, and veggies. Toss until these sturdy ingredients are coated in the dressing.


  1. add the fresh herbs. Toss again, taking care to combine the salad ingredients.


Finally, season to taste and serve! If I’m preparing this salad for a summer get-together or an occasion, I also enjoy showering it with additional mint leaves right before serving.
