This delicious recipe takes only 16 minutes to cook, and the ingredients mentioned below can cater to 4 people.
Ingredients
3/4 cup olive oil
1/4 cup balsamic vinegar
Kosher salt and freshly ground black pepper
For the chicken and wrap:
1 chicken breast, boneless, skinless
220g mixed salad greens
1/4 cup pecans, chopped
6 medium strawberries, hulled and cut into quarters
1 green onion, sliced (white and light green parts)
110g ounces goat cheese, crumbled
4 large whole wheat tortillas
Method
For the balsamic vinaigrette, in a small bowl whisk together the olive oil, vinegar , and salt and pepper to taste. Measure out 1/2 cup for the chicken and refrigerate the remaining vinaigrette to use later, if desired.
For the chicken and wrap, heat a grill or grill pan.
Put the chicken breast into a large plastic storage bag. Seal the bag, leaving an opening, then pound the breast to an even thickness with a rolling pin. Add about a quarter of the reserved balsamic vinaigrette, then seal the bag and shake it around to coat the chicken completely.
Grill the chicken until cooked in the middle, about 5 minutes per side. Set aside to cool slightly. When cool enough to handle, dice the chicken.
Place the salad greens in a large mixing bowl. Add half of the remaining dressing, and toss to coat the greens. Add more if it needs it. Stir in the chicken, pecans, strawberries, and green onions. Lightly toss it a few times until everything is combined. Add the crumbled goat cheese on top and toss a couple of times.
Divide the salad equally along the center of each tortilla. Roll up, then slice in half.
